Learn the secrets of making great pizza, pasta, antipasti and more at home from Cantinetta Luca’s Executive Chef Jason Balestrieri. These classes offer hands-on instructions and recipes as well as a taste of your hard work in the kitchen.

 

2013 Classes


April 18 – Lasagna
Learn how to make this popular dish from scratch. Techniques will includes making wide noodles, sauce and choosing the perfect cheeses.

May 16 - Arancini & Fritters
Learn how to make fried risotto balls filled with delicious mozzarella and prosciutto. Techniques will include other variations of fritters.

June 20 – Pizza
Learn about proper heat, making great dough, shaping the pizza, different styles to consider, and everything else you’d want to know about the world’s favorite food.

July 18 - Local Salmon vs. Columbia River Salmon
Learn how to pick and prepare this delicious fish.

August 22 - Linguini w/ Seafood & Shellfish
Learn about making great pasta dough for this long and thin noodle, different types of pasta machines, cooking times and procedures, as well as recipes for dressing this perfected pasta with seafood & Shellfish.

September 19 – Bruschetta
The traditional toasted bread antipasto with various types of toppings is a perfect addition to the home cook’s repertoire.

October 17 – Pizza
Learn about proper heat, making great dough, shaping the pizza, different styles to consider, and everything else you’d want to know about the world’s favorite food.

November 14 - Sausage 101
Learn everything you need to know how to make delicious homemade sausages from picking and grinding the best meat, great seasonings and stuffing.

December 19 – Gnocchi
Learn about making a great potato dough for this popular light and pillowy pasta, cooking times and procedures, as well as recipes for dressing the perfected gnocchi.
