Learn the secrets of making great pizza, pasta, antipasti and more at home from Cantinetta Luca’s Executive Chef Jason Balestrieri. These classes offer hands-on instructions and recipes as well as a taste of your hard work in the kitchen.

 

2014 Classes


January 16 – Lasagna
Learn how to make this popular dish from scratch. Techniques will includes making wide noodles, sauce and choosing the perfect cheeses.

 

February 20 – Pizza
Learn about proper heat, making great dough, shaping the pizza, different styles to consider, and everything else you’d want to know about the world’s favorite food.

 

March 20 - Butchery 101: The Basics
Learn the tricks of the trade on butchering your own meats. This course teachs knife skills, basic anatomy and sourcing the best product.

 

April 17 – Minestrone
This hearty Italian soup is a crowd pleaser. The class will go over ingredients, techniques and variations.

 

May 15 - Pizza
Learn about proper heat, making great dough, shaping the pizza, different styles to consider, and everything else you’d want to know about the world’s favorite food.


June 19 – Pasta & Pesto
In this hands-on class you’ll learn about making great pasta dough, different types of pasta machines, cooking times and procedures, as well as recipes for dressing the pasta with a favorite sauce, pesto.

 

September 18 - Pizza
Learn about proper heat, making great dough, shaping the pizza, different styles to consider, and everything else you’d want to know about the world’s favorite food.

 

October 16 – Meatballs & Sugo
Learn how to make a favorite Italian dish. The class will go over making your own meatballs and sauce from scratch.

 

November 20 - Pumpkin Ravioli
Pumpkin Ravioli is a seasonal favorite at Cantinetta Luca. In this hands-on class you’ll learn about making great ravioli dough, different types of pasta machines, cooking times and procedures and sauces.

 

December 18 – Pizza
Learn about proper heat, making great dough, shaping the pizza, different styles to consider, and everything else you’d want to know about the world’s favorite food.
